









Bringing Japanese discipline to delicate desserts, Kotsu Kotsu is Hartamas’s prime new patisserie for roll cakes, chiffons and shortcakes, crafted by a crew led by Japanese master bakers.
These treats are top-tier, freshly baked twice everyday by chefs Sasaki and Fukuda, harnessing Japanese-built ovens that keep the cakes captivatingly moist.
Each detail is deeply deliberate: An interior by Design Room 702, responsible for Kansai International Airport’s executive lounge; team uniforms by an Osaka fashion label, pristine in white to represent the purity of the cakes; and Arita porcelain serving plates in half-chrysanthemum silhouettes inspired by folding fans.
Kotsu Kotsu's cakes rise to the highest occasion: Elegantly fluffy kinako roasted soybean sponge swirled with cream, mochi and brown sugar jelly; tea chiffon cakes that convey the unbearable lightness of being, silken and achingly airy with vanilla bavarois and raspberry jam; fruit cakes lined in lively, luscious harmony with orange, raspberry, kiwi and mango.
Fun facts: Kotsu Kotsu joins Hartamas’ family of Japanese establishments, Ramen Minamo, Itsumo Yakitori, Kingyu and Kyomo Yakiniku. Its cakes are conceived in the spirit of omiyage, Japan’s graceful tradition of gift-giving.
