Twelve-hour-smoked beef ribs bear hints of Indonesian iga bakar, served with spicy peanut sauce and shallot anchovy salad; five-day-aged golden pomfret is marinated with house-fermented chillies that channel Thai aromatics; lamb finds heat and harmony with Indian-inflected smoked tomato chutney and spiced yogurt.
