This Japanese-inspired kitchen - Ramen Project - pops up three days every week in Seputeh, Sunday to Tuesday, serving honest meals prepared with patience and heart, generosity and care.
Flavours prove light and clean, the kind of food that leaves you satiated but not sluggish. Every set is complete with appetisers, a delectable dessert of the day, and sparkling plum drink.
The Lemon Shio Ramen is not our conventional bowl. It features painstakingly house-made noodles with chicken chashu in clear chicken broth, brightened with lemon tare, aromatic citrus oil, blanched green dragon vegetables and slow-roasted cherry tomatoes.
The Hokkaido Soup Curry is hearty and heartwarming, with a tender whole chicken leg, rounded with Sapporo's Suage-style fried veggies over mild-mannered curry soup, complete with spiced rice. It's the perfect rainy-day choice.
The richest-textured offering is the classic yoshoku lunch of Chicken Cream Stew, a white-hued simmering of chicken made colourful with carrots, broccoli and pumpkin. It's soulful in simplicity.
Contact instagram.com/ramen_project_my for reservations. Advance payment is required - each set takes time to craft from scratch, and the kitchen tries to curb wastage.
