Shio pan fans, head to Hartamas’ new Shio Artisans, serving the Japanese-inspired bread rolls in surprising sourdough styles.
On Saturdays, explore experiments like shio pan bagels (glossy and gently salted, with a crisp, buttery sheen that surrenders to milk-bread fluff) and matcha strawberry shio pan (taking on the beverage trend with bittersweet-savoury results, perfumed with matcha, piped with strawberry jam, poppy-pink with freeze-dried strawberries).
On Thursdays, Fridays and Sundays, classic shio pan comes in hot, slow-fermented for a patient 24 to 48 hours, building tang and chew, oven-fresh for maximum textural indulgence by 10am.
For the rest of the week, baker Terry toasts to carbs with choices like pistachio sesame sourdough slices with house-infused kombu or maple butter, offered to the public inside the Lean Wellness Centre fitness studio.
