Stay-Home Cooking #10: Chick Kut Teh by Project Sazu

Soulful and soothing: Shah Alam-based home cook Project Sazu is back with another fun recipe - Chick Kut Teh. If you have time on your hands and chicken on your mind, try this out!


For ingredients, you'll need:
Chicken drumsticks
Black garlic bulbs
Enoki mushrooms
Coriander
Soy sauce
Chinese lettuce
Bak Kut Teh herbs and spices


Hygiene is important! Begin by washing all your ingredients. Then get 1.5 to 2 litres of water on the stove and bring it to a boil.

Add the bak kut teh herbs and spices, followed by the chicken drumsticks.  Then add the whole black garlic. Add 1 tbsp of soy sauce, then 1 tbsp of caramelised soy sauce.

Mix it up and let it simmer for 45 minutes. Add in the enoki mushrooms on top, and you're almost done! Let it simmer for another 10-15 minutes, then it's ready to serve.

On the side, stir-fry some Chinese lettuce, perhaps lightly with oil and garlic. This meal is best rounded out with steamed rice.
