2016 Menu & Playing Petanque: Rendez-Vous @ Bangsar

Time flies at Rendez-Vous: Bangsar's cornerstone for French cooking is firing on all cylinders for 2016 with a repertoire of traditional Gallic treats that's more extensive than ever. A meal here may begin with light refreshments (an amuse bouche of bacon-wrapped prunes paired with a Kir cocktail is ideal); it might end hours later with wide smiles & broad waistlines. The restaurant remains operational this Chinese New Year, so it could be the spot to hit if much of the neighbourhood seems shut.

Rendez-Vous' new sharing platter deserves to be its signature temptation: It's a staggering spread that catches most customers by surprise - two people can indulge in this for a full feast, while six can enjoy it as a heavy starter. The selection may change from week to week, but its key constituent is kitchen-made terrines, pates & rillettes. We especially like the two notably unique game pates - hazelnut-laced deer & wild boar - for their relatively robust & meaty flavours, but everything's worth trying, from coarse-textured pork liver pate to fatty-fleshy pork rillettes. The rest of the platter is memorably curated too - the escargots prove excellent, juicy rather than rubbery, while the chicken gizzards are more tender & tasty than typical. Other stars include chewy-savoury slices of smooth smoked duck breast & a genuinely lovely potato salad mixed with morsels of pork; you'll also find ham, sausages & pickles, rounding out this platter that's justifiably priced at RM120++. Rendez-Vous supplies reasonable-costing wine recommendations - for this platter, the Baron Monbarduc, Bergerac 2014 (RM28/RM140++).

From the a la carte menu, our current best bet might be the tartiflette (RM49++) - a speciality of the Auvergne-Rhône-Alpes region of the French Alps, it's a steaming-hot gratin of potatoes with lardons, onions & reblochon cheese, as sumptuously rich as it looks & sounds, with melting layers of rich flavours & textures, best shared by two customers. If you like that sort of calorie-fraught provocation, you'll probably also appreciate Rendez-vous' interpretation of the classic onion soup, blessed with a beautiful sweetness, bolstered by the bite of bacon of an Emmental-smothered tartine (RM24++), or the escargots, which emerge in an eye-catching fashion, sandwiched in vol-au-vent puff pastry, showered in garlic butter sauce (RM34++). And finally, for salmon enthusiasts, keep an eye out: Rendez-vous plans to soon introduce a very creamy salmon tartare on its regular menu (RM34++); the restaurant also consistently offers specials of the day to bait regulars, recently serving puffs stuffed with minced salmon partnered with comforting heaps of mash & ratatouille (RM46++). Pairing options for these span a South African Golden Kaan Chardonnay (RM28/RM140++) to a French Belle Mare Cabernet Sauvignon (RM29/RM145++).

On Sunday mornings, brunch is available, 12pm through 5pm. One of the possible orders is the Menu Boulanger (RM59++ for a total of three courses), as bread-laden as its name suggests - the first course comprises a fresh croissant, pain au chocolat & toast accompanied by honey, jam & butter; the second features two eggs (choose an omelette or scrambled), bacon, sliced bread, sauteed mushrooms, Provencal-style tomato, a salad & cheese; dessert might be a decadent chocolate mousse cake with mint ice cream. To help burn off all that eating, Rendez-Vous is currently KL's sole restaurant that offers complimentary games of boules for its customers - take your turn at learning to play petanque, throwing hollow but heavy metal balls at a special section beside the outlet. It's a pretty fun experience that will make your lunch or dinner here all the more interesting.

A sneak peek at what's ahead for Rendez-Vous within the next few months: Founder Arnaud, chef Flo & their team will be launching a first-floor lounge above the main restaurant (wittily named Upstage); it looks set to be a cosy venue to enjoy jazzy musical performances while relaxing over after-dinner drinks - perhaps the Polignac Reserve Cognac, a deep, aromatic Grande Champagne blend (RM23++ a glass). But if you're keen to check out Rendez-Vous before that, another excuse might be for Valentine's Day, when a Lover's Menu will showcase seductive lures like devilled quail eggs with avruga caviar, Boston lobster raviole on ratatouille with bisque sauce, pan-fried foie gras with red berries puree & aged balsamic reduction, scallops in shell with cauliflower emulsion & glazed baby vegetables, wholegrain-mustard-&-honey-crusted beef tenderloin with green peppercorn sauce & potato gratin, brie cheese & chocolate moist cake with a melted caramel heart - at RM195++ per person, reservations are encouraged. Many thanks to Rendez-Vous for having us here.

Bulletproof Coffee @ Bungkus, Empire Damansara

Bulletproof coffee is not on Bungkus' official menu, but this is one of the few venues in the Klang Valley that will help prepare it by request (though call ahead in advance to confirm) – with a caveat. Customers must bring their own coconut oil (preferably extra virgin), which the café will blend with its organic coffee (cultivated in a Thai mountain region) and butter (from grass-fed cows’ milk). “You must use very good butter, but the recipe only requires a very thin slice of butter,” barista Pearl Banaga explains. The other components are 90 ml of coffee and 40 ml of coconut oil. A cup of bulletproof coffee is sold at RM13.80, compared to RM11.90 for a regular latte.

Bungkus’ interpretation of bulletproof coffee tastes very rich, with fatty, savoury dimensions from the butter. “I know some people are curious about bulletproof coffee,” Banaga says. “When they sniff it, they think they’ll like it, because it’s quite aromatic. But in my experience, after they’ve tried it once, they often won’t have it any more.” While Bungkus does not aggressively promote the availability of the beverage, Banaga feels it could potentially be targeted at customers who work long hours and want a strong boost. Claims that it can improve the metabolism could also appeal to gym-goers, she adds.

Ante @ 1 Utama

One of our favourite restaurants for meat, meat & more meat, Ante has finally opened its second outpost - a bright, sleek setting that's an alluring addition to 1 Utama. If you're a fan of Ante at Solaris Dutamas, it's worth checking out this new branch too; there are several offerings exclusive to this mall outlet, including inventively conceived small plates for the modern palate.

Only at Ante 1 Utama for now, fans can kick off their meal with a tasting platter of cold cuts & other appetite-whetting nibbles (RM38; serving size for two persons) - Jamon Iberico ham, house-cured salmon, smoked duck breast, confit onions, candied olives, cherry tomatoes, pickled beetroot, multi-grain bread & smooth French butter. Each component is fresh & appealing, presented in precisely the perfect proportions; it's a pleasure to polish off the entire platter & look forward to the next course.

Ante 1 Utama specialises in beautiful small-plate recipes personally created by the team here, separated into cold & warm categories. The former includes Jamon Iberico balanced with poached & fresh apple slices, shaved radish & chive flowers (RM32), while the latter boasts highlights like succulent cuts of sous-vide cured pork loin coated in a delicate tuna cream, shallots, celery leaves, capers & tomatoes (RM24). Each is admirably elaborate in its conception & ambitiously nuanced in its flavours & textures - dishes that shine a new spotlight on Ante's capabilities as a confident, contemporary-minded F&B brand.

Ante's best known for pork, but its repertoire extends to poultry too, with temptations like a small plate comprising a chilled duo of smoked duck breast (RM26; the first side is shaved thinly & layered with a bed of soft tofu for an intriguing combination, well-contrasted against a counterpoint of juicy chunks tossed with orange segments, hazelnuts, cucumber & chilli oil for a bit of heat that teases the taste buds) & a main of tender sous-vide chicken breast (RM36), made creamy with hollandaise sauce & mashed potatoes, complemented by the earthiness of mixed mushrooms, some sauteed & others turned into crispy chips.

The restaurant performs similarly well with fish - customers can savour their salmon house-cured & coupled with a complex ensemble of fried capers, red radish, chervil, egg cream, dill & spring onion oil on toast (RM28) or poached to a supreme moistness, miso-glazed with a surprisingly crunchy seaweed crust, partnered with braised shiitake & torched leeks (RM52).

But ultimately, pork is the reason for Ante's existence & the chief lure for most of its followers. Ante 1 Utama carries on the tradition of turning the hog into the best sort of comfort food, from hard-to-find concoctions like sumptuous confit pork cheeks with cauliflower puree, carrots, demi-glace, onion rings & parsley (RM39) to crowd-pleasers executed with flair, such as a satisfying bolognese pasta with minced pork, kitchen-made tomato coulis, herbs & parmesan cheese (RM28), all ideally paired with Ante's thoughtfully curated wine selection, spanning Australia to Argentina. Many thanks to Ante for having us here.

Milkissimo Hokkaido Gelato @ Da:Men USJ Subang

Hokkaido's Milkissimo opens its first outpost in the Klang Valley this month, offering gelato that fuses Japanese ingredients & flavours with Italian ice cream production values. Expect a unique assemblage of chilled treats, made with milk from Hokkaido's city of Hakodate, in varieties that span not only the classics like green tea & black sesame, but also everything from corn, melon, pumpkin, purple sweet potato & white peach to edamame, cherry blossom & hascup honeysuckle berries.

Milk is the mildest flavour, while cherry blossom & white peach provide for pleasantly subtle, not-too-sweet nuances. Corn, pumpkin & purple potatoes allow natural, produce-driven flavours to shine. Strawberry & hascup both supply refreshingly tangy-sugary results. If you're adventurous, edamame is an acquired taste - the earthiness of the beans may not be the most accessible fit for ice cream. Textures do vary - most prove light & relatively airy, some are notably soft & smooth; others, such as edamame, seem to have their namesake flavour ingredients blended in with the gelato. A single-flavour, 85-gram cup costs RM11.90, a double at 115 grams is RM14.90, & a 145-gram triple is RM17.90, with a RM1 surcharge for some premium flavours. This is Milkissimo's pioneering branch in KL/Selangor; it has over a dozen outposts in Japan, Singapore & Penang.
