Proof Cafe & Sky Lounge @ The Signature, Desa Sri Hartamas

One of 2015's most intriguing collaborations is taking shape at The Signature in Sri Hartamas - Khya Wing, Constance, Kapila, Azlina, Jia Yuan, Joanne & Izani have launched Proof Cafe in this serviced suites high-rise & plan to open a produce-focused restaurant here soon, harnessing expertise from across the region to leave a positive imprint on the city's culinary landscape.

Proof caters mainly to the building's residents, but public walk-ins remain welcome - the place is still a work in progress, but on this recent Friday evening, it was a sanctuary of serenity. Enjoy a soothing bird's-eye view of the surroundings of Sri Hartamas & Mont Kiara while tucking into kitchen-made apple bircher muesli (RM23 nett) with slices of poached pear plus lemon curd on the side; the kitchen's very small platoon currently serves breakfast, lunch & tea everyday, & occasionally dinner on weekends.

Our favourite offering here so far is the ratatouille (RM23 nett), a beautifully flavoursome combo with roasted pumpkin, potato hash, tomatoes, eggplant, bell peppers & herbs - sweet & tangy, warm & creamy, the most satisfying meat-free recipe we've had recently - a convincing testament to the Proof team's drive to create wholesome meals in imaginative, inspiring new styles.

The people of Proof have nurtured friendships with Melbourne-based chefs & coffee specialists to help them reach for fresh heights - chef Ingo Meissner of The Grain Store has consulted on the menu to conceive recipes like a breakfast quiche laced with lamb sausage & chicken meatloaf (RM23), while Axil Coffee Roasters is set to start supplying the beans for Proof's brews very soon. More collaborations are imminent when the Proof team's second restaurant at The Signature opens later this year.

The breakfast/brunch menu is extensive - everything from an unusual bread-&-butter French Toast with strawberry compote, white chocolate custard & peppered caramel (RM23) to choc chip pancakes with lime coconut cheesecake mousse & organic honey (RM23). Even the sides on each plate, such as Proof's pea salsa & spicy herb tofu salad, are very carefully considered. Prices are fair, epitomised by a lovely & lively variety of house wine that starts from as encouragingly low as RM15 per glass.

 Proof has no formal desserts menu yet, but we trust both Azlina (some customers might recognise her from MasterChef Malaysia - her passion is for sweets, as we discovered when we first encountered her in 2012 at Solaris Dutamas' PickNik) & Jia Yuan (who splits his time operating a separate cafe, Espresso Attic in Nilai) to tempt us back with tantalising treats.

  2. For now, I hate to say this but the surroundings look more spectacular than the food :( But then again, it's a WIP, so it's understandable.

Contact.ewew: i think i might have ordered some of the wrong items in terms of presentation, or maybe i visited too early ... this week they introduced a new portobello mushroom dish that looks beautiful ... though i think their ratatouille and muesli look great too, just that i didn't manage to capture it all that well in my pics, heh :)

  4. Those food is undeniably delicious, and i think the place of a restaurant would really add the mood (which is positive) to the customers. great food + great place = happy customer, therefore, i would really come back to the place! :) thanks for this sean!
