This shadowy spin-off of Underscore Coffee is a playground for testing and tasting, cultivating a creative chef’s perspective to coffee, cold and bold in feel and flavours.
These cold brews have character, crafted purely with coffee and water, steeped for 24 hours or longer at a range of temperatures.
The result: House creations with coded names like Onin Onivid, Ogidni Otugam and Lapo Iragrag, with nuances that evoke monk fruit to mangosteens, sourdough starters to Sauvignons. Order on the rocks, by the bottle, or in coffee flights.
Also intriguing: Zero-proof, non-alcoholic cold brew concoctions inspired by classic cocktails like the Old Fashioned (Rebma cold brew with tangerine-infused syrup and fresh orange oil), Milk Brew Martini (Onin cold brew with milk brew and 0% ABV coffee liqueur) and Triple Sec Cascara (CB coffee blossom tea with 0% ABV orange liqueur and lemon and orange juices).
Pair with creamy own-baked cheesecake inspired by ice cream sandwiches.
