Demo @ Helsinki, Finland

Dinner at Demo is a brief but passionate affair filled with tantalising creations by a Michelin-starred kitchen - cured whitefish with sliced turnip, horseradish mousse & salmon roe; house-made bread stuffed with kitchen stock ash; rice crackers with mushroom dust; pan-seared cepes with consomme, bacon, truffle dust & celeriac; pickled Baltic Sea herring with sunflower pesto & dried egg yolk flakes; beef three ways - entrecote, braised & terrine; a crispy taco with aged cheese, walnuts & blueberries; & an almond liqueur cake crowned with cloudberries & butter ice cream, plus distinctive wine pairings.

  2. I'm a carnivore so the beef three ways - entrecote, braised & terrine gets my vote! Not sure why but your pics depicts the city as clean but cold (as in weather) and historic :D

Rebecca: that beef platter was really memorable - love how they compiled three very distinctive preparations in one serving, and they all worked well together :) you're right about cold and it's fairly clean too ... historically it's not as old as many other cities in europe, but it does still date back many decades :)
