Guest Chef Eugene Lim and his siblings have long worked to preserve Peranakan culture via projects like their own books and clothing museum exhibits.
Chef Lim harnesses mainly his Malaccan grandmother’s recipes, inspired by Tok Panjang long table feasts that take centre stage for special occasions like birthdays and weddings.
Rich with candlenuts, coriander and other aromatic ingredients, these Peranakan pleasures are painstakingly prepared from scratch for vibrant colours and robust flavours.
The Babaron Signature Laksa is a flagship speciality, fragrant with daun kesom in thickly textured, heartwarming broth, crowned with prawns for a lip-smacking noodle sensation.
Ayam Buah Keluak is seldom seen in modern restaurants, so it's a treat to savour it at this all-you-can-eat extravaganza.
We'll eagerly return for second helpings of the Sambal Buah Keluak, a spiced accompaniment that pairs addictively with rice or even fruits for a pleasurably bitter-savoury kick.
Pai Tee is perfected in the Peranakan Heritage Buffet Dinner - delicate rice flour batter shells, pan-fried to a golden crisp, packed with shrimp, jicama, carrots and beansprouts, finished with sweet chilli sauce for mouthfuls of irresistible bliss.
The Peranakan Nyonya Popiah is another scrumptious snack - soft wheat flour spring rolls, plump with cooked vegetables, crab meat and shrimp. Fun fact: Chef Lim has a special secret for this popiah - its seasoned sweetness comes naturally from prawn stock instead of sugar!
Lemper Ayam makes for merry munching - glutinous rice shaped into cylinders in pandan leaves, for brilliant bites of chewy rice with a chicken filling, cooked with coconut milk.
