China House is the new Hyatt Regency Kuala Lumpur's restaurant for northern Chinese cuisine, spanning wood-fired Peking duck to hearty beef specialities.

The Peking duck is distinctive, prepared with poultry flown from farms in northern China. These ducks are raised for some 60 days, plump with plenty of fat, for richly crispier skin and juicier meat.

China House roasts the duck with rambutan and mangrove wood in a classic oven for 75 minutes, infused with subtle smokiness, complete with delicate pancakes plus sweet bean sauce, Chinese leeks, cucumber, cantaloupe, garlic and sugar. Preorder to avoid long waits; second course options for the duck include wok-fried duck bones with salt and pepper.

The menu is wide. For bovine crowd-pleasers, try the beef cheong fun or braised oxtail with chestnuts and lemongrass, paired with Yellow Mountain Peak and Jiuqu Red Plum tea.
