Hartamas’ new Mamma Cafe & Bistro births a bevy of Italian and French classics in a casual setting, its kitchen spearheaded by a Singaporean-born chef raised near Italy’s northern border with Switzerland.
Mamma’s minestrone simmers nine vegetables in a hot soup that tastes honest and homemade; the salade nicoise tosses together tuna and anchovies with fresh leaves, string beans, black olives and cherry tomatoes; the duck leg confit is as tender as can be, complete with orange demi-glace, thyme and mashed potatoes.
